Neer Dosa is a delicacy from Udupi in coastal Karnataka. It is a simple and delicious breakfast. 'Neer' means 'water' in Kannada. It has got this name since its batter is watery. Neer Dosa is one of the easiest Dosas to prepare since it is cooked only one side and does not require spreading. The watery batter is self-spreading!!
Ingredients:
Rice - 1 cup (for approximately 8 medium sized Dosas)
Fresh Grated Coconut - 1/2 cup
Salt - 1/4 tsp
Procedure:
- Soak the rice 5 to 6 hours or over night
- Drain the water from the soaked rice
- Grind coarsely (medium) soaked rice in a blender along with grated coconut and salt.
- Take the mixture out from the blender to a bowl , Add water to make a watery batter.Normally it takes arround 3 to 4 cups water for one cup of rice.
- Heat a tawa on medium heat for some time till it is hot enough to evaporate a drop of water immediately.
- Pour the batter using a cup/ladle from little with a circling action so that a thin layer of batter fills the tawa. Try to fill the gaps, if any , while pouring its self . Do not try to spread the batter lying on the tawa using a spoon.
- Pour a spoon of oil all around the edges of the dosa.
- If you want soft dosa, close the lid and cook for 2 mins. You can also cooking it open for 2 mins to get a crispy roasted dosa.
- Cook only one side. Do not over-turn while cooking.
- The dosa goes very well with Coconut Chutney and Kai-Bella (a sweet dish prepared with grated Coconut and Jaggery)
