I had baked Muffins few times earlier but this is the one which I liked most. This Muffin fills your mouth with the rich flavour of Pineapple and coconut. While you eat, you can feel the tiny pieces of Pineapple amidst the coarseness of coconut, taking you to a different world!! Its a must-try for all of you and I bet you will all like it. Here you go.. :-)
Ingredients:
Raising Flour - 1 cup
Baking Powder - 1/2 tsp
Baking Soda - 1/4 tsp
Sugar - 1/4 cup
Dry / desiccated / grated Coconut - 1/4 cup
Crushed* Pineapple - 1/4 cup
Milk - 1/2 cup
Vanilla essence - 1/2 tbsp
Vegetable Oil - Less than 1/4 cup
Pinch of Salt for taste
Note:
- *Cut the pineapple into small pieces and crush it in mixer. Take care that it does not become paste like. If you do not like the raw smell of Pineapple then you can cook it in boiled water for 3-5 mins.
- Grease the Muffins tray with oil and keep it aside.
Procedure:
- Swift the raising flour, baking soda, baking powder and salt. Then add sugar to the flour and mix it and keep it aside.
- Take milk, vanilla essence, crushed pineapple and oil in a bowl and mix well. Then add grated coconut mix it again.
- Add flour to this bowl little by little and mix it slowly to make the Muffin batter.
- Pre-heat the oven for 5 mins at 190 C / 375 Fahrenheit.
- Pour this Muffin batter to the greased muffin tray. Take care that you fill the muffin cups only half and not fully. This is to avoid the spilling out of the cups when they raise.
- Keep the tray in oven for 10 mins and your delicious Coconut Pineapple Muffins are ready to serve.
- The baking duration might vary with the size of the muffin cups. Mine are very small (1.5'' diameter) hence, 10 mins was enough. It is better to check it after 10 mins, if it is not baked then keep it for 2-3 mins more.
- It is a treat to have these Muffins with Coffee or Tea!!
