Mysore Pak, as the name suggests, comes from the the heritage capital of Karnataka, Mysore. 'pAka' in Kannada means dish. Its is an authentic Kannada sweet. It has a myth that it is difficult to prepare. Well, its not that difficult and you can prepare it quite professionally after a couple of times. Given its spellbinding taste, I am sure you would not hesitate for those few tries! Having said that, if you are a newcomer to sweet section, have a Bheem or Hanuman for your assistance as this would need constant stirring of ever-concentrating and thickening ingredients in hot pan!! :-) I am sure everyone has a Hanuman Bro or Bheem Hubby ;-)
Ingredients:
- Besan (Gram flour) - 1 cup
- Sugar - 2 cups
- Ghee (Crystallised Butter) - 1 cup
- Oil - 1 1/2 cup
- Water - 1 cup
- Cardamom powder (Ilaichi) - 1 tsp
- Swift and mix gram flour with 3/4 cup of ghee and make a lump free paste texture and keep it aside .
- Take a container of desired shape and grease it with oil. This container will be used as a mould for Mysore Pak.
- In a thick bottom vessel add sugar and water and make sure the heat is low to medium.
- In the other vessel add remaining oil and ghee for heat.
- When the sugar syrup comes to one string consistency pour the gram flour paste and add cardamom to it, reduce the heat to very low.
- Stir continuously for 2-3 mins till the sugar and gram flour mix well to get a uniform consistency. Continues stirring also avoids the contents sticking to the pan.
- While stirring continuously, keep pouring a ladle full of oil every 2 min. Make sure by the end all the oil and ghee mixture (1&1/4 cup) is used up.
- After some time of heating and continues stirring, the flour paste starts to separate out from the surface of the pan without sticking. The sweet aroma mind and senses and your moth starts watering!.Now pour the 'pAka' into the vessel greased with oil. Allow to cool for 10 -15 mins.
- Using a thin knife cut it into cubes from the top. Take the pieces out and your delicious Mysore Pak is ready to serve!
